Recipe of the Month - Salad of Aubergine and Feta

Method
Gently fry the garlic slices in olive oil until lightly golden. Remove, drain on kitchen paper and put to one side. Fry the aubergine slices until golden on both sides. If you have a griddle pan you can use that to get the nice charred lines.
To assemble the salad: Scatter your salad leaves over your serving platter. Add layers of aubergine slices, crumble the feta over. Then scatter with mint leaves
Dressing: Combine the ingredients in a jam jar and shake. Drizzle over your salad.
